Spicy Apple Chai Muffins
Ingredients
- 1/2 cup brown sugar
- 1/4 tsp salt
- 1/8 cup oil
- 1 large egg
- 1/2 cup milk
- 1 apple, grated
- 1/3 cup Monin Chai syrup
- 2 cups of self-raising flour
Method
Heat oven to 210C or 200C fan bake. In a large bowl, mix together, sugar, salt, oil, egg, and milk until thoroughly mixed. Stir in the coarsely grated unpeeled apple. ( A tangy apple such as Braeburn, or Granny Smith is best.) Fold the flour into the mixture without over-mixing. Spoon into mini-muffin pans or regular muffin pans which have been sprayed with non-stick spray. Bake for 10-12 minutes or until golden brown, and until the tops spring back when lightly pressed. Leave to stand for 2-3 minutes, remove and cool.
